welcome to my new favorite chicken dish.

every week, i go through the publix ads online and most every week they feature some sort of recipe using products that they have on sale.  last week’s recipe was “party chicken.”  the only reason i tried it was to figure out what the hoopla was about panko bread crumbs.  whenever i see a recipe that calls for them, i just substitute bread crumbs and call it good.  but i broke down and bought the panko bread crumbs…  they’re very light and crunchy and brown very nicely.  from now on, i will be substituting panko for bread in every recipe calls for any kind of crumbage. 🙂

anyways, moving past the crumbs… this dish is down right delicious and is very easy to make.  tom kept saying how good it was and he’s pretty picky about dishes involving any sort of creamy substance.  so you should definitely give this dish a try!

  • 3 tbsp butter, at room temp
  • 1/2 c flour
  • 1 – 1 1/2 lbs chicken tenderloins
  • pepper, to taste
  • 1 10.75 oz can condensed cream of chicken soup
  • 1/2 c mayo
  • 1 1/2 c panko bread crumbs
  • 1 c shredded cheese
  1. pre-heat oven to 425°.  coat a 9×13″ baking dish with shortening.
  2. place flour in a gallon-size ziploc bag.  season chicken with pepper; add to bag one piece at a time.  coat tenderloin in flour, shake off excess flour, remove from the bag and place in the baking dish.  repeat.
  3. combine soup and mayo using a whisk; spread evenly over the chicken.
  4. stir panko and cheese into the softened butter.  you may need to use your hands.  (this can get messy!)  top chicken with cheese mixture.
  5. cover dish with aluminum foil, bake 10 min.
  6. remove foil.  bake 10-15 min. or until top is golden and chicken is throughly cooked.
